Baguettes pas trop cuit!
One of the many things I love about this baking malarky is that we are learning all the time!
Now, if you've been paying attention, you'll know that while Mark is quite proud of his baguettes he is nevertheless always in search of the perfect baguette.
So he was delighted when a French customer asked if her regular baguettes could be "pas trop cuite " ( not too " baked"). Mark had assumed that all French people would be searching for the crustiest baguette possible in the UK. But this is a misunderstanding.
Apparently If you go in a boulangerie in France and listen for five minutes, you will hear people asking either for "une baguette bien cuite" or " une baguette pas trop cuite".
And so, of course, this means the French boulangers must bake baguettes of different crustiness - and there is no such thing as the 'perfect' baguette because all their customers like something different. And so now Orb is baking a variety of baguettes; baked for shorter or longer periods to give our customers at St Ives Market and the Bushel Box a choice of 'bien cuite' or 'pas trop cuite.'
And some of them must be perfect!
Over School Farmer's Market
Last Friday we rushed back from St Ives Market and set up our stall in the playground at Over Primary School to take part in their Farmer's Market. We were joined by plenty of stalls from the school selling alls sorts of goodies - including home made toffee apples - yum. Polkadot Tea Shop, Ashworth Oils, Just Shortbread, Fen End Country Kitchen and Hempsalls Community Farm were there too. It was a fantastic afternoon - heaving with mums, dads, granddads along with offsprings! We sold out double quick time - and, best of all, we met lots of the Year 6 children who we taught how to bake a loaf of bread in the summer - many of them still baking which was great to hear.
Ramsey Rural Museum Food Fayre Sunday 1st November 11.00am
If you fancy a 'drive out' (as my dear old mum and dad used to say!) this Sunday then you could do no better than a trip to Ramsey Rural Museum's Food Fayre. We went to this last year expecting a quiet day - how wrong we were! Lots of great food and drink stalls, a great museum of country life and a great day all round. So do come along if you're kicking your heels on Sunday.

Elm Court Orb Talk
On Wednesday 4th November Caroline and Mark are going to visit the wonderful people of Elm Court Sheltered Housing in Over. We will talk to them about bread, cakes and our business. But we also hope that we're going to hear lots of bread stories from the older generation. We'll let you know any good stories we get in our future blogs.
C3 Event - Cambridge Saturday 14th November 12-00noon - 8.00pm
You may have seen in the local news about the recent opening of the large C3 Community Church, Coldhams Lane - on the round about opposite Sainsbury's.
They are holding a Festive Fayre on 14th November and already have over 30 stalls booked, - lots of street food; Over's very own Polkadot Tea Shop; food, crafts. There are over 750 members of the C3 Church so it should be a good day

Over Village [Christmas] Market - 12th Dec 10.00 - 1.00pm
Our next market already has 12 food and craft stalls booked - and we're confident we'll be pretty close to our 20 stall limit by market day.
Our first market was such a fantastic day if you did not manage to get there you'll want to get the next one in your calendar - and make it a bit of a trip out - bring the family. Last time one of the greatest thing about the market was seeing so many clusters of people chewing the fat, or chewing the spicy chicken roll or the slices of cake and coffee. A great atmosphere that we want to make a part of the market.
We hope the venue will be Over Village Green as last time. However if the ground is too wet we will re-locate to the Over Primary School - hope to see you there - and be early if you want bread/cakes as we sold out really quickly last time round - we're planning on making more to keep the beast fed this time round!
